Cowboy Hash


1 Pound Lean Ground Beef
1 White or Yellow Onion (chopped)
1 Medium Green Bell Pepper (chopped)
1/4 Cup Vegetable Oil
4 Small White or Red Russet Potatoes
1 Teaspoon Chili Powder
1 Teaspoon Salt
1/4 Teaspoon Black Pepper
Peel and slice the potatoes. Set Aside. Pour oil into large frying pan over medium to high heat. Add onions and bell pepper. Cook until tender. Stir Frequently. Crumble beef into the pan and brown. Gently stir in potatoes. Add chili powder, salt, and pepper. Mix well. Continue cooking for 30 minutes, stirring often. Cook until potatoes are tender and golden brown. Drain off any excess fat. Serve with barbecue sauce or chunky salsa. Makes 4 servings.
